Car running well, but cold?

I had this problem over the really cold spell. I thought it must be the thermostat and changed it for a brand new one, but it still seems to be happening? It will heat up around my stop start driving but when I get onto the motorway the temp seems to go down. Any ideas?

Assuming the new stat isnt faulty, not really tbh, but someone else might. :-/

Have you tried flushing the system
Maybe clogged matrix
